A Year Older, But Not Old

Today we celebrated David's birthday. After church we had a small-ish party for him with my parents, our friends Tim and Christiy, and our neighbors Clayton and Michelle. I made one of David's favorite meals: White Chili. It's chili made with chicken stock, chicken meat, and great white northern beans - and it's fabulous! It's a recipe that I was lucky enough to acquire from Mom E. when I joined the family, and it is one of our favorite winter meals!

I also tried my first attempt at a Pioneer Woman recipe. I made a Heath Bar Cake, and it was incredible. Here's the recipe:


     Ingredients
  • 1 box (18 Oz. Box) White Cake Mix
  • 1 box (large 5.4 Oz. Box) Instant Chocolate Pudding
  • 1 whole Egg
  • 2 whole Egg Whites
  • 2 cups Water
  • 1 cup Powdered Sugar
  • 2 whole Egg Yolks
  • ¼ cups Margarine
  • 1 teaspoon Vanilla
  • 2 cups Cool Whip
  • Crushed Heath/Skor Bars, To Sprinkle On Top

     Preparation Instructions 

     Mix the cake mix, pudding, egg, egg whites and water together. Bake in a greased 9×13
     pan at 350 degrees for 30-35 minutes.

     Frosting:
     Mix powdered sugar, egg yolks, margarine and vanilla until well mixed. Fold in Cool 
     Whip and top the cake. Sprinkle crushed Heath/Skor bars.

I changed it slightly. I crushed up one heath bar and sprinkled it over the cake batter before I baked it. It was really yummy!

Happy Birthday, Babe! I love you so much! You are such a blessing to me, and I love how you model unconditional love! You truly live out your love for Jesus Christ, and I admire that. I thank God for you daily - you are the best gift He ever gave me!

It was a wonderful day! And Dad & I will enjoy cornbread & White Chili tonight! Thanks for sending some home with us.

I have to admit. . . . we pretty much live a super blessed life to have y'all so near & to have good friends!

Oh - and the cake was very yummy, too!
